Silmar’s Taste is a selection of Portuguese artisan food.

What inspired you to start Silmar’s Taste?
London Multicultural Street food.

And where do you see it going?
I am opening a Portuguese Retaurant with a business partner next month in Edgware Road – Colindale.

Tell us a bit about food from Portugal?
It’s a blend of the best world flavours – by the early 15th century, Portugal’s sea-faring explorers introduced spices such as coriander, saffron and ginger to Europe, as well as tomatoes, potatoes, peppers and many other ingredients from the New World along with exotic spices. Also, their colonial Mozambique chillies created the world famous piri-piri sauce to marinate chicken. The Atlantic, the Mediterranean and a green countryside are the complement for a tasty and diverse cuisine.

What does it mean to you?
It means alot! It’s my culture, and pride!

What makes the food you serve so special?
Silmar’s Taste food is hand made and uses traditional preparation methods and the rustic look of a home dish.

After Silmar’s Taste, what other food traders/caterers/cooks out there do you think are really good?
There are plenty of fantastic traders at Acklam, on the rest of Portobello, and in the Borough. Not so much into cooks, but more of into what kind of food….

If you could only eat one dish, which would it be?
Love all food…hard to choose…

Do you have a food blog?
In my website we writte about portuguese food and wines and other curiosities around portuguese culture.

What effect are food bloggers having on the country’s food scene?
They help give authentic opinion to food scene on the street.

What’s your favourite new ‘trend’ on the British food scene at the moment?
Not into trends…but it may have to be Street Food no?
