Jackie Lee (@jaxies) is one of the pastry chefs at Claridge’s Hotel in Mayfair, an ex-food writer, food blogger, sometime photographer and private caterer. Jackie trained at Leiths School of Food & Wine and before starting at Claridge’s spent time at some of the best restaurants around the UK, notably Midsummer House in Cambridge, Dinner by Heston at The Mandarin Oriental and Raymond Blanc’s Le Manoir aux Quat’Saisons in Oxfordshire.
Jackie’s blog (I Am A Feeder) started as distraction from her final year of university and evolved into a way into the food industry, landing her freelance writing and catering jobs, enabling her to travel around the world to meet other food bloggers and helping her realise that – though she fought very hard against it! – all she really wanted to do was be in a kitchen, making food for others. Hardly surprising, particularly as it runs in the family (Jackie’s grandmother is a celebrity chef in Hong Kong)! In 2010 she was involved in Foodbuzz.com’s first ever Project Food Blog and made it down to the final 24, out of an initial 2,000 entrants.
Whilst still at Leiths, Jackie used her blog as a “diary into the (slightly insane) mind of a culinary school student” and now continues to blog her own recipes and experiences as a professional chef (though somewhat sporadically now that she spends her time mostly hiding in a dark basement making pastries).
Jackie Lee will be speaking at #FBC14 on “Going Back to School – Blood, Sweat & Tears to Becoming a Chef”, offering up anecdotes from her experiences and practical advice for others thinking about doing the same or starting their own food business.
