David, Andres and Andrea of Guasacaca (@GUASACACALONDON) will be serving up Venezuela’s national dish, arepa at #FBC12 Market.
What can FBC12 attendees expect from you at the event?
AREPAS are disc-shaped cornbread patties big enough to hold in two hands and can be eaten plain, with butter or different fillings.
So, just what is Guasacaca?
It’s the representation of the Venezuelan culture and cuisine through the most emblematic national dish (AREPA) which describes every Venezuelan around the world.
What inspired you to start Guasacaca?
Now a days, London offers a huge mix of cultures when everyone is open to new trends and able to try something different and new. In addition, we do believe in our product and we know that its going to be very well accepted by every good food lover.
And where do you see it going?
Based in the feedback of the regular and new customers in Acklam Village Market, we could say that the Arepas are loved by people from everywhere in the world, so our plan is expanding Guasacaca in different markets in London, and who knows? hopefully in another place in Europe.
Tell us a bit about food from Guasacaca?
The Arepas are opened up like a pocket and stuffed with tasty fillings, such as shredded beef, black beans, grated cheese, avocado and chicken, or any combination that takes your fancy. But whatever filling you try, don’t forget to add the final flourish, a dollop of tasty guasacaca sauce, made with avocados, or a spicy splash of picante hot sauce.
What does it mean to you?
The Arepa definitely is a tasty, unique and diverse Venezuelan meal that everyone must try.
What makes the food you serve so special?
Is something new, different and interesting at the same time.
After Guasacaca, what other food traders/caterers/cooks out there do you think are really good?
Gastronomica, Wild and exotic meats and Spanish cuisine like paella.
If you could only eat one dish, which would it be?
Pabellón (Venezuelan dish): Contains; black beans, shredded beef, fried plantain and rice.

What effect are food bloggers having on the country’s food scene?
They can show their typical dishes and make them known worldwide.
What’s your favourite new ‘trend’ on the British food scene at the moment?
It’s something more than the food, now a days it’s about the environment, the creativity and service offered to customers. We like eating and drinking out there having a great moment.
