60 seconds with Louisa Foti

Meet Louisa of Chez Foti (@ChezFoti) from Haute Pyrenees, France.  She joins #FBC5 with her buddy Vanesther Rees who blogs at Bangers & Mash (@BangerMashChat).

What are you most looking forward to about #FBC5?
Meeting fellow bloggers, learning some new skills.

What do you look for in an ideal ‘buddy’? What have you learnt about your new ‘buddy’ that you didn’t know before? How did you meet your #FBC5 ‘buddy’?
I’ve been a tweeting and blogging friend with Vanesther for about a year now and LOVE her gorgeous blog, full of wonderful photos and exactly the sort of food I want to eat!

What experience at #FBC5 are you most looking forward to sharing with your ‘buddy’?
Meeting other bloggers together in person. Should be exciting finally putting faces to people we both know through tweeting and blogging.

What about your ‘buddy’s’ blog inspires you the most?
Her interesting family friendly recipes (ALL of which I want to make!) and photos.

If you could cook one recipe from your own blog for your new ‘buddy’ what would it be?
Boeuf en Daube as I blogged my recipe for Vanesher’s Care to Cook recipe challenge back in August, and the challenge was what would you cook someone to welcome them to your home.

From where do you get inspiration?
From my family’s recipes, past recipes I’ve made time and time again, other bloggers, websites, cookery shows and books. And more recently from my veggie patch as I’ve been attempting to be veggie self-sufficient.

How has food blogging changed your life?
It’s given me a creative space that I didn’t have before. Somewhere that’s all mine, a little bolt-hole for the mind. And having two small children and living in extremely rural SW France I’ve found this very important. It’s also made me a more varied and interesting cook.

Do you blog full time? What’s your day job?
I’m a stay at home mum with two small children and I blog for pleasure when I get a chance. Though this will change when I go back to work and study in a few months time!

What’s your favourite part of the food blogging process? And the most negative?
Feeling like I should cook a greater variety of foods and styles. It’s definitely made me a more varied and interesting home cook!. No negatives really.

What do you find most challenging about blogging?
Finding the time to take good photos, especially in poor light conditions during the winter. Also finding the time to properly follow and read all the other wonderful blogs that are out there, there’s so many and I have so little time!.

Now that’s a tough question! One of my favourite recipes that I turn to time and time again is my Chicken, Pumpkin & Borlotti Stew using all veggies and beans from the garden. What’s your signature dish?
A paella in the summer:http://chezfoti.com/2012/07/03/paella/.  Living very near to Spain I tend to make many a paella for dinner guests and visitors. In the winter it would have to be the classically french Boeuf Bourguignon or Coq au Vin.

How many cookbooks do you own?
A whooping 65 plus a few more still in storage somewhere or other! Though I can’t say I refer to them all that often now that we’re well and truly in the Internet age.

What’s your least favorite food?
Anything processed on the whole. I never ever buy pre-prepared or processed foods bar biscuits and bread…and even on those I’m trying to cut down!. I make everything from scratch and like to know exactly what’s going in mine and my children’s food.

Do you have a favourite food writer and why?
Nigel Slater!. He’s my home cook foodie hero. Easy to follow, sensible, seasonal recipes. And they’re always spot on.

Who taught you to cook?
My mum and granny. My mum used to demonstrate cookery and was great at showing all the basics and my Granny was a keen cake and biscuit  baker.

What would your last meal be?
To start, my favourite starter of all time, Beef Carpaccio served with rocket and Parmesan. Followed by roast duck breast with fresh cherry sauce, served with saute potatoes and a perfectly simple green salad. I’d then forego a pudding and have a cheese board (with unlimited pickings!).
