Today we are meeting the lovely Diane Tapscott from London. Diane is the food blogger behind The Intolerant Foodie.
What motivated you to blog about food?
A massive life shift when I found out I had food intolerances
What’s been your ultimate meal to date?
I’m too lucky to name one. I just celebrated my 60th birthday with 40 friends at Bottega in Napa Valley and it was very fabulous. I was so relieved that kitchen could translate a meal for two into a meal for 40 and then some.
What would your last meal be?
Real bread and pasta, possibly foie gras, Bottega’s caponata with grilled figs and lamb chops, a cheese selection from La Fomagerie sauteed spinach with preserved lemons… it’s really too hard. I would want pizza too. Red wine.
Where do you get inspiration from?
Travel, different cultures, images.
How has food blogging changed your life?
Hasn’t yet except make me guilty I’m so far behind.
Future aspirations for the blog?
300 recipes that help people with food intolerances enjoy great-tasting, fresh and healthy food.
Who is your favourite celeb chef and why?
I really like Mario Batali because I love his restaurants. He seems down to earth and authentic.
Do you have a favourite food writer and why?
Gabrielle Hamilton at the moment. Her memoir was so well written. It is something to aspire to.
